(AMOS) Independent variables

Hello thanks for reading my post and hopefully helping me :D

I`d like to do a path analysis with AMOS. But I have several questions, and looking for the answers for over a week.

1) I have several control variables in my model (like age, gender, and SES). Can I treat them like normal exogenous variables to control for their influence?

2) Can I use dummy-coded categorical-variables as exogenous variables? (gender, SES and so on) Is it only possible, if I effect-code them or does it give any other strategy?

3) Do I need to correlate all exogenous variables or only those, who are theoretically correlated?
